You moved here from Italy 20 years ago. Quickly settled in the capital?
I was invited to work at the El Dorado restaurant. I didn’t know the language, and the translator was not. But it is not the hard part: go down to the subway – that’s a serious test. But learned to read… This is my first school, then graduated from the course, and then got used to the Russian winter.—
Still 1997 – hard times, crisis. People probably don’t have the money to go to restaurants?
Our guests have always been very wealthy and left a decent check. I worked a lot, did not pay attention to the stars. For me the main thing – to do everything at the highest level. We often would – get celebrity: Laima Vaikule ran at Alla Pugacheva I remember she liked a duck or Turkey with apples. A funny thing happened with Valery Leontiev. He did not want to put in a restaurant, as they were not dressed according to the dress code: come in something bright and shiny. But in the end everything worked out.—
Fashion on food changed?
Gradually. As soon as the Russians began to travel, the taste has changed. For example, we could not teach people to eat meat with blood, and now it is very popular.

Remember the first time I tried borsch?
Remember the brew! It made my guys in the kitchen. They drank this drink and become merry. This went on for several days. I asked: “What is this?” Said: “Russian Coca-Cola”. And offered me to try. I did not refuse, drank one glass, two… and felt a little tipsy, as if drunk. They made it a fortress like beer. I had to declare an immediate ban on “Russian Coca-Cola” during operation.—
You spend a lot of time at work. The family remain in power?
My day starts at eight in the morning and ends at night. But as soon as the output, give it fully native. I have four children. Develop them in the industry, so the guys just achieve themselves! And the choice is always with them. Have not yet decided who I want to be. But your youngest, Michele, loves to watch me work in the kitchen, asks how everything is prepared that it is better to mix.—
Who is the chef in your house?
Wife Olga. I love it when she cooks. Potatoes, baked fish, pancakes – easy homemade meal! The only thing that will never accept of Russian cuisine is the pasta. Olya always wondered what I wanted for dinner, we go to the market. Rarely tell you how to best prepare, Olga is not offended.

Honestly, no. I was just invited to play the role of himself – the emotional Italian. I thought it was interesting, so I agreed. ‘ve been rehearsing, a lot of shooting days, then voice. If there is a chance to do it again, do not give up.—
What with the filming of remember?
When I fell a few times the fake leaning tower of Pisa – first the head, then shoulder, it was funny and dangerous at the same time. Directors and actors gave me advice on how to keep a straight face, what is the position of the hands will look more advantageous. And, of course, talked with Dmitry Nazarov. Remember, he asked which football club aches for my father. Hearing the answer, he in the hearts exclaimed that it’s “a complete nightmare”. But tastes differ, I just know it.
